A friend of mine who is a blogger at TheSoccerMomBlog treated me to one of her husband’s meals. It’s called the Baja Shrimp Stacks. I am not crazy about shrimp, but it was delicious! Our family loved it so much that we wanted to create something similar, but not with seafood. We eat ground turkey quite a bit so we thought why not try it with ground turkey and veggies? The recipe is different from the Baja Shrimp Stacks, but this way you have two recipes to choose from.
- 1lb of ground turkey
- 2 zucchini squash
- 2 cups of jasmine rice
- 2 large avocados
- 1/2 cup of soy sauce
- 2 Tablespoons of brown sugar
- 1 Teaspoon of ground ginger
- 1/2 cup of sour cream (you can add more if you want)
Step 1: Wash the zucchini squash and slice it. Add 2 teaspoons of olive oil or vegetable oil to a warm pan. Sauté squash.
Step 2: Put water to boil for rice.
Step 3: Cook ground turkey. I add roasted garlic and herb seasoning to the turkey, but it’s not necessary. Set aside when finished cooking
Step 4: Add rice to boiling water. Lower heat and let it simmer for 15 minutes.
Step 5: Cut avocados in small slices
Step 6: Whisk soy sauce, ginger, and brown sugar together. Add half of the sauce to the squash and half to the ground turkey and stir.
Step 7: Make the topping sauce. Put sour cream and sriracha sauce in a bowl and stir. You can add as much as you like.
Step 8: Use a bowl or cup to make your stacks. Spray non stick spray so it won’t stick. Start with putting the turkey first. (1 inch deep) Next layer is a 1/2 cup of rice. Leave the rest of the room for avocado and squash. Use a spoon pack it in. Carefully turn it over and add sauce to the top.
